Cabbages!
Posted on June 8th, 2010 by Sophy LabbettAt the moment I am busy making new cabbages and other veg for stock after my collection was depleted following a cry for help from my god-daughter. She needed to make a ww2 garden pdq… I found out on the Saturday, and it had to be in on the Monday!!!
Actually, if I am honest I love making cabbages. I began by following Angie Scarr’s method from her book, but then adapted this. I tend to prefer using collected scraps to make the cabbage rather than using a veined leaf cane. I find that this way each cabbage/lettuce/cauli comes out different, as in life. No two cabbages that I make are ever the same. The last batch I made ended up as lettuces – the colour mix was too light, no hints of black or navy
The bag of strawberry slices is awaiting me making a new batch of shortcakes. I love these too, although they can be rather fiddly to make, especially in portion rather than complete gateau form – the marble paste has a tendency of going everywhere!
